I’ve never been a big raisin bread fan, but my husband is, so I thought maybe somewhere in the world there was a raisin bread recipe that we could both enjoy. Well I found it, tweaked it to perfection, and here it is! As soon as it’s gone, I have to make more since it’s so good with breakfast and for snacks. And since I’m in Christmas shooting mode for my stock work, I stuck a Christmas tree in the picture. I know, I know… it’s not even Halloween yet! Scroll down for the recipe :)

Raisin Bread

ONE LOAF

  • 1/3 c warm water (110*F)
  • 1/2 Tbl active dry yeast
  • 1/2 c warm milk (110*F)
  • 2 Tbl + 2 tsp white sugar
  • 1/4 tsp salt
  • 1 egg – beaten
  • 2 Tbl + 2 tsp butter – melted
  • 2/3 c raisins
  • 2 & 2/3 c bread flour (approx)
  • 1 Tbl milk in small container
  • 1/8 cup sugar mixed with 1 tsp cinnamon

TWO LOAVES

  • 2/3 c warm water (110*F)
  • 1 Tbl active dry yeast
  • 1 c warm milk (110*F)
  • 1/3 c white sugar
  • 3/4 tsp salt
  • 2 eggs – beaten
  • 1/3 c butter – melted
  • 1 & 1/3 cups raisins
  • 5 & 1/3 c bread flour (approx)
  • 2 Tbl milk in small container
  • 1/4 c sugar mixed with 2 tsp cinnamon

THREE LOAVES

  • 1 cup warm water (110*F)
  • 1 & 1/2 Tbl active dry yeast
  • 1 & 1/2 cup warm milk (110*F)
  • 1/2 c white sugar
  • 1 tsp salt
  • 3 eggs – beaten
  • 1/2 c butter – melted
  • 2 c raisins
  • 8 c bread flour (approx)

  • 3 Tbl milk in small container
  • 1/2 c sugar mixed with 1 Tbl cinnamon

In a large bowl, dissolve the yeast in warm water. After yeast is dissolved, mix in the milk, sugar, salt, eggs, butter, and raisins. Add in enough flour so it’s the consistency of pancake batter and stir for 4 minutes with a wooden spoon. Add in more flour so it’s not so sticky and then knead on a floured surface for 5 minutes. Let rise in a warm place until double in size (about an hour in a warm place).

Knead out the air bubbles and divide dough into the number of loaves you are making. Roll out the dough for one loaf on floured surface into a large rectangle about a 1/2″ thick (about 9×20 is what I did). Brush the surface of dough with milk, then sprinkle cinnamon sugar mixture. Roll tightly so as not to create any air pockets. Tuck ends underneath and place in greased bread pan. Allow to rise until double (about 30 minutes in a warm place). Bake at 350* for 30 minutes. Remove from oven and immediately remove from pan.

My Nephew and Daughter’s pictures found in Use

Imagine the surprise on my nephew’s face while working online doing his homework and seeing a great big picture of him on the site Spark Notes promoting their new iPhone App, which of course is now fanning the flames of his fame :) Then as I sat down to the computer to blog about it, but first went to Facebook to respond to a message – and there in the sidebar is a picture of my daughter advertising a photography website. I love it :)

And here are the originals from over on iStock:

Cindy Singleton : Pomerelle is CLOSED! So sad. Dang wind. But 70 mph gusts probably would have blown me to the next mountain peak anyway!
